White Chocolate & Cranberry Cupcakes

With Christmas around the corner, I felt the need to get baking. There’s always an excuse for cake but especially at Christmas, anything remotely festive is quickly consumed. I love baking cupcakes and particularly decorating them so when I received some Christmas cupcake decorations for my birthday recently, it just had to be done. But I didn’t want them just to look Christmassy; the flavour needed to be appropriate too so I trawled the internet and found White chocolate and Cranberry cupcakes. You can see the recipe I used here.

With relatively easy to follow instructions and easy to source ingredients, I was sold! The only recommendation I would make would be to substitute the butter with Stork because despite leaving the butter at room temperature for a while before beginning, it still produced a couple of very messy mixing incidents when the flour (and icing sugar later) just did not want to blend!  If you don’t want to use Stork, make sure to mix the butter on its own first to soften and you’ll be good to go!

I treated my colleagues with these cupcakes and they were a resounding success. A few were slightly skeptical about the cranberries but after tasting, they were won over. I obviously had to taste test too and my favourite part was the buttercream which was luxuriously rich and satisfyingly sweet. Even if you choose a different cake base, make sure you try the white chocolate buttercream. I made mine with golden icing sugar which just enhanced the flavour! I have only ever found golden icing sugar in Waitrose so if you struggle to find it, normal icing sugar will definitely still do the job.

Gingerbread House of Dreams

In an attempt to make myself feel super festive this past week, I decided to build my very own gingerbread house. To add an extra yuletide twist, I picked the most Christmassy playlist to blare out as I worked.

Worked maybe isn’t the best word. It was hardly taxing. Unfortunately, I can’t claim to have made or shaped the gingerbread myself as I got a handy little kit given to me ages ago which gives you everything you need, including the royal icing (aka sweet cement).

The box comes with full instructions and a stand to make the building easier. I skilfully (if I may say so myself) managed to get four walls standing and glued together. The real struggle came with the roof and the gables. As they were at an angle and relying on the balanced weight of the opposite gingerbread tiles, it was a lot trickier than I ever imagined but after a LOT of icing was used to plug every single gap imaginable, it held and my little gingerbread abode was complete. On to the fun part – decorating!

img_0848The kit comes with plenty of sweets in different shapes and colours to adorn your house and the icing can be used to outline the windows, doors and roof tiles as well as act as the glue for the decorations. So much fun!

I really love the way my gingerbread house came out. It’s certainly not perfect but that’s not the point. If everyone’s looked exactly like the box, that would be boring right? Mine has character…

The Ultimate Festive Hot Chocolate

Over the past month, I have undertaken the delicious (maybe slightly waist enhancing) task of taste-testing all the festive hot chocolate additions to the high street coffee shop menus this Christmas. Oh, the woes of a blogger who just had to try nine different hot chocolates for you readers! I can’t even pretend that this was difficult!

Costa

Costa has four different festive hot chocolates, all of which sounded yummy and were each finished off with some lovely touches – a candy cane with the mint hot chocolate, gold sprinkles for the orange and even glittery marshmallows for the Toasted Marshmallow flavour.

img_0511What impressed me most about the Costa hot chocolates was that the flavour vs syrup balance was just right. There was just enough syrup to make each one clearly recognisable but still a definitive chocolate flavour and no sticky syrupy after-taste.

I am not the biggest fan of cherries so I was a bit hesitant about the Black Forest flavour but it is subtle enough that it was still super enjoyable.
The orange and toasted marshmallow flavours were both satisfying and in particular, I thought the toasted marshmallow was a unique flavour option which I was surprised to find totally tasted as it was advertised.

img_0568The definite knock-out flavour though was the mint. I had to have three of them in the past month just to triply confirm how yummy it was (I seriously couldn’t get enough) and I will be incredibly sad when this falls off the menu in January.

As a side-note, I searched high and low for the Lindt hot chocolate (five Costas in four cities) and came up empty. It must have been good! 

Black Forest – 6/10

Orange – 5/10

Toasted Marshmallow – 8/10

Mint – 10/10

 

Caffe Nero

Caffe Nero went festive menu crazy this year and delivered five hot chocolate flavour options – Tiramisu, Spiced Orange, Salted Caramel, Amaretto and Praline. I did not try the Amaretto and Praline versions as these two flavours really do not appeal to me so go ahead and judge those for yourself! Right, onto the taste-testing…

img_0534For someone who doesn’t drink coffee, the Tiramisu option is a very happy medium. I’m not sure I could have it daily like people have their morning coffee though! I opted for this hot chocolate when I needed to warm up but didn’t want such a sweet drink and it was a great choice.

The Spiced Orange flavour definitely trumps (sorry, that word has taken on another meaning now hasn’t it, especially when combined with orange?!) the Costa version. I think it’s because it’s got that festive twist of the spiced undercurrent. At Christmas, we usually buy oranges and pierce the skin all over with cloves and this drink is a welcome reminder of that tradition, in a cup!

The Salted Caramel flavour was fab, for the first few sips. After that, the overwhelming sweetness was a bit too much (and I have a very sweet tooth)! The syrup balance was also a bit off as it definitely lingered and coated my mouth for a while afterwards.

Tiramisu -7/10

Spiced Orange -7/10

Salted Caramel – 5/10

 

Starbucks

img_0695Starbucks had a very limited (i.e. one) hot chocolate festive option but what they do, they always do well. Their Fudge Hot Chocolate was the closest out of all of them in delivering the flavour they promised and it was thicker than the others, which I think just shouts luxury. I would campaign for this to be on their menu all year round. It’s not necessarily just a festive flavour!

Fudge – 9/10

 

Pret a Manger

img_0551Pret went very simple (which I think is just their style) and only offered a mint hot chocolate on their festive menu. This was the most disappointing of the lot. The mint tasted very fresh so clearly the flavouring or syrup they use is made from natural ingredients but it reminded me more of toothpaste! Not quite enough sweetness. I mean, it was still a hot chocolate so not to be sniffed at but I’m not sure I  would order it again.

Mint – 3/10

 

THE WINNER – For your ultimate festive hot chocolate fix, head to Costa and choose the Mint. If a Costa proves elusive, Starbucks’ Fudge flavour was a very close second. Happy hot chocolate drinking everyone! Now, what else can I taste-test?!

Oxford Christmas Market

I love a good Christmas Market! I work in Oxford once a week so I took the opportunity on Oxford Christmas Market’s opening day to pop down and have a little browse. This market opened a lot later than many of the others with its first day on 8th December! It only runs for ten days too so if you read on and think it sounds good, you better get a move on to appreciate it yourself.

Located on Broad Street, the market stalls are based in traditional wooden chalets, beautifully framed with winter foliage and fairy lights which I’m sure would make it look simply magical in the evening. There was a large selection of stalls, with a variety of goodies many of which if I’m honest, I wanted for myself, never mind for gifts.

One of my favourites was Amica Felt which is one of the cutest stalls I have ever seen. I wanted all of it! They have felt key rings and Christmas decorations in the most adorable animal shapes and even full-on reusable felt wreaths.

A very interesting stall I discovered was LA-EVA, a soon-to-be launched beauty company who were using the Christmas market as a debut, product testing opportunity. Their whole ethos is to use pure ingredients with only the highest organic standards. I had a little sample of two of their hand lotions, both with unique fragrance combinations I don’t think I’ve ever experienced before. Definitely one to watch for next year!

Salisbury Christmas Market

1st December is actually my birthday but seeing as the whole world is consumed by Christmas excitement, I decided to spend my birthday afternoon in Salisbury, exploring their Christmas Market.

The weather decided to be suitably festive and the temperature was 0 degrees, if not below, so I definitely had to wrap up warm! The market is set in traditional wooden sheds with a varied selection of products, ranging from culinary goodies such as cheese and fudge through to gift items like leather handbags and jewellery.

Although I am heading to my Mum’s for Christmas Day, my husband and I are hosting a mini-Christmas in the New Year so we stocked up with two delicious Saucissons and an incredible Red Onion and Rioja Cheddar for our festive delicatessen offering.

We also got a couple of lovely handmade gifts for our family. For obvious reasons, I can’t share them but I am very excited to give them. A good bit of Christmas shopping done, we moved on to the high street stores, modelling a selection of hats in Marks and Spencer and stopping off in Costa for a hot drink to thaw out!

Later on in the evening, we returned to the Christmas Market to enjoy a Lantern Parade, an annual tradition in Salisbury which sees a procession of crafted lanterns taken through the city, starting at the Cathedral and ending in Guildhall Square. The effect of the lanterns was magical and hundreds of children had clearly worked very hard on their snowman lanterns, which were so cute!

img_0682During the afternoon, a large silver balloon began to inflate in the square which was very curious! But all was revealed once all the lanterns had gathered. The balloon began to rise and a silver fairy was elevated into the air, performing acrobatics and waving to the crowd. It was so engaging and we did find ourselves mesmerised for a good ten minutes as the fairy moved above the crowds.

The Christmas Tag!

What is your favourite Christmas movie?

It has to be Home Alone 2. It never fails to make me laugh, particularly the hotel scenes, plus Kevin’s relationship with “the Pigeon lady” is so heart-warming. You’ve got to love watching little Kevin save Christmas, again.

Do you open your presents on Christmas Eve or Christmas Morning?

Definitely Christmas morning. There’s nothing better than waking up to open gifts together, in bed with my husband. The only problem is that I tend to wake up significantly earlier than my husband so I am left waiting for a while before I get to delve into what Santa has given me.

When I have children, I love the idea of giving them a present of festive pyjamas on Christmas Eve for them to get snuggly the night before Christmas. But the rest of the gifts will definitely be reserved for Christmas morning.

Have you ever had a White Christmas?

I live in the South of England so snow is quite a rare sight. I did a bit of googling after seeing this question and apparently, there have been a couple of White Christmas’ since I was born but unfortunately, I don’t remember them!

What made you realise the truth about Santa?

I think my older brother may have told me. From what I remember, he took great delight in telling me. We get on a lot better now than we did when I was little!

Can you name all of Santa’s reindeers?

Um…Vixen, Blitzen, Rudolph, Prancer, Dancer…NO, apparently, I can’t!

What is your all-time favourite holiday food/sweet treat?

This is an easy one. I absolutely love Lebkuchen, a German baked treat, which is full of festive spices, and most resembles gingerbread. I don’t think I’m alone in this as the packs fly off the shelves in the supermarket and I normally have to buy my Christmas supplies in November to make sure I get some!

Be honest: Do you like giving gifts or receiving gifts better?

I honestly like giving gifts more. I am very lucky in that when people ask me what I would like for Christmas (or my birthday), I really struggle. So I love putting my present list together, thinking carefully about what each person would really like. I love the shopping trips and the wrapping. The lead up to Christmas is almost always better than the actual day and I think the present-buying is a key part of getting me in the festive spirit.

What would be your dream place to visit for the holiday season?

I really really want to spend Christmas in a log cabin on a snowy mountain somewhere, gathered around a log fire and drinking hot chocolate. I think somewhere like Switzerland would be amazing!

What is your favourite Christmas song?

“All I want for Christmas is you!” Is my fave, probably because I just love the version in Love Actually.

Do you make New Year’s Resolutions? Do you stick to them?

I sub-consciously tell myself I’m going to do something different or something better in the New Year but really, why is 1st January THE time to do that? I think you can resolve to do something at any time of the year.

Favourite Christmas scent?

I have a room diffuser in my living room at the moment which smells of Gingerbread Latte and that is pretty special.

As a kid, what was the one (crazy, wild, extravagant) gift you always asked for but never received?

This is a tricky one because I don’t really remember. If there was a gift I asked for but never received, I soon got over it because my mum is the absolute best at gifts so whatever she got me was probably better than the thing I’d said I wanted!

What’s the best part about Christmas for you?

Definitely the cheesy answer here but it’s definitely about spending the day with the people you love most. My husband and I had the option of having Christmas just the two of us in our new house this year but I don’t think it would be the same without spending it with family. Second best part is the food of course!

3 Christmas movies I should have seen but never have…

There are some movies it is generally assumed by everyone that you have seen but I have fallen at the first hurdle with a few of the Christmas classics. This festive season, it’s time to fix that so I have picked up the three top Christmas movies that I am (sort of) ashamed to say I have never seen…

Is this a Christmas movie anyway? It’s set in a lot of snow and I associate it with Christmas solely for that reason but having never seen it, I’m not sure if Christmas actually features at all. Regardless, it’s a movie that all of my friends have seen and most of them don’t have children so they can’t use them as an excuse for having watched it!

2. It’s a Wonderful Life
This is a film that features on a lot of Christmas movie lists online and is apparently one of those classics you need to have seen. I just remember vividly the movie being part of a Friends episode where Phoebe was completely traumatised so here’s hoping my reaction won’t be the same when I see it!

3. Elf
This is the most shameful. Elf has taken over from the likes of Home Alone to be considered the forefront Christmas movie. And I haven’t seen it. I’ve heard so many great things about how funny it is and I’m sure that after watching it, it will become a firm favourite on my annual Christmas movie watch list.

Survive your Christmas Shopping – Six Top Tips

The festive season is upon us so I have compiled my six top tips for completing your Christmas shopping mission!

1. Research, research, research

Pick up a selection of catalogues from your favourite high street stores. The Boots Christmas catalogues always seems to appear first! Take a browse through each and make a note of some ideas for gifts. Check out the top gift guides online too – all the national newspapers will write a gift guide which they’ll publish at the end of November/start of December but there will already be guides out there giving you the low-down on what will be the top toys for the younger ones on your gift list. For most stores, Christmas begins in July when they hold showcases of what they expect to be the best-sellers during the festive season so if you find the right articles, you’ll get a heads-up on what’s making it onto Santa’s list and what’s most definitely not. Here are a few I’ve managed to find around the web to help you out:

2. The early bird catches the worm
If like me, you like to do some of your shopping in the actual store (and not just from your sofa), you’ve got to get there early. Some sort of festive mania seems to overcome shoppers from mid-November and it gets crazy. If you arrive for when the doors open at 9am, you’re sure to avoid the masses which then makes for a much more relaxed shopping experience.

3. Use the tills in menswear 
For some reason, the menswear tills in department stores seem to be the quietest in the festive season. Or in M&S, the underwear section. I can’t explain why but this has definitely proved to be a quick win for me in previous years.

4. Always check Amazon
Even when you’re out and about, it is definitely worth taking a minute to price check on Amazon. A lot of shops have wised up and price matched their most popular items but notable stores who definitely haven’t are WHSmiths and HMV (if you even still have one on your High Street). You can save a lot of money ordering from Amazon sometimes which leaves you with extra cash for an additional gift!

5. Remember a bag
This year, you’ll be charged 5p per plastic bag so remember to take a bag if you can. And you’ll be saving the environment (a little bit) as you shop!

6. Don’t forget sellotape!
I always forget the sellotape and get home to find that while I’ve successfully bought all my presents, I can’t wrap them! Fail. Many stores will have sellotape available to buy at the checkout so make sure to pick some up as you pay.
